Definition: Food-Service Contractor

Defined as a person who is knowledgeable in some or all aspects of the restaurant industry. Expertise includes real estate site selection criteria which considers costs and attributes for success; marketing and an understanding of the competitive environment; consumer trends that affect the industry; commodity impact; and other factors beyond the control of the industry. Would also include knowledge on purchasing and supply chain management, food and equipment, and cost impact on other factors such as labor, insurance, utilities, and other restaurant controllables that affect overall performance.
