Eric Paul was most recently an Owner and Operator of 11 Ruby Tuesday franchise units. He has worked with Ruby Tuesday for more than 28 years. He began as a General Manager in Nashville and moved throughout the Southeast as an Opening Manager for Ruby Tuesday's corporate office. Mr. Paul also served as a multi-unit manager, Senior Vice President, and Concept Head. In 1998 he left Corporate and began operating as a franchisee. Mr. Paul has been an operator of 11 units in Southern Florida, with restaurants between Vero Beach and Boca Raton. He was fully immersed in the day to day operations of all 11 of his stores, until June of 2007. (This is me - Update Profile)
